Burnt butter orange cake
A distinct flavor of burnt butter, honey and oranges. Its a match made in heaven. The cake is super moist. Enjoy it with a cup of tea.
Made it for my son's homecoming. Need I say it bowled him over completely.
Ingredients
Butter 130 gms
Flour 2 cups
Baking powder 3 tsp
Baking soda 1/2 tsp
Unrefined raw sugar 110 gms
Honey 180 gms
Eggs 2
Milk 1/2 cup
Cranberry drie 50 gms.
Orange extract 1 tsp
Orange zest 1 tbsp.
Orange slices 4
Method
Chop the cranberries and mix in a tablespoon of flour.
Heat butter in a deep sauce pan till it turns golden brown. Remove it from fire and let it cool.
Care should be taken that it doesn't burn.
Sift flour, baking powder and baking soda.
Take an 9 " round pan, 3" high, grease it with butter and then dust it with flour.
Sprinkle sugar on the orange slices and place them in the tin, sugar side down.
Remove 30 gms brown butter, in the remaining butter add sugar, milk and honey. Mix well.
Beat the eggs lightly.
Add the butter sugar mixture to the eggs. Beat to mix.
Mix in orange zest and orange extract.
Now add flour in three batches. Beat very lightly just to mix.
Now add the cranberries and mix.
Pour the batter in the prepared tin and bake in a preheated oven at 160 degrees celsius for 40 to 50 minutes.
Check with a skewer.
Remove on a wire rack.
Run a knife around the edges.
Let it cool for 10 minutes. Then invert carefully.
Heat the burnt butter, we had kept aside.
Pour it over the cake.
Serve warm.
