These tiny cookies shaped as coffee beans are for coffee lovers. Slightly bitter in taste. You can of course increase the sugar if you want them sweeter.
Use soft butter.
Ingredients
Wholewheat flour. 65 gms
Cornstarch 10 gms
Cocoa powder 6 gms
Coffee 4 gms
Hot water. 5 gms
Butter. 35 gms
Jaggery powder 35 gms
Method
Mix coffee and hot water. Let it come to room temperature.
Mix all the dry ingredients and sieve them a couple of times.
Beat butter and jaggery till light and fluffy, approximately 2-3 minutes.
Now add coffee mixture.
Beat again.
Mix in the dry ingredients with a spatula or lightly with your fingers.
If the dough is dry add a tsp or two of water or milk.
Don't add too much liquid.
Let the dough rest for 20 minutes.
Divide the dough into ten portions.
Smoothen them so that there are no cracks.
Give them an oval shape.
Using a knife or a bench scraper cut them in the centre till 2/3 depth.
Keep the cookies in the fridge for 30 minutes.
Bake in a preheated oven at 160 degrees Celsius for 14-16 minutes.
Let them cool on the baking tray for sometime before you remove them to a wire rack.
Transfer to an airtight container once cookies are completely cooled.
Enjoy with a cup of coffee or tea.
