These Cowboy Cookies are a healthier version of their famous namesake. However, these still taste like they came from some fancy bakery.
Cowboy cookies are said to have originated in the 1800 and they were a popular treat for cowboys on their trail . However there is little or no evidence that this is true as the chocochip cookies were not invented till1938
They really rose in popularity during the 2000 Bush-Gore presidential campaign. Apparently Family Circle Mag featured recipes from each of the candidates wives, and then had their readers vote. And Laura Bush’s Cowboy Cookies beat all of the other recipes.
These hearty cookies are overloaded with pecans, oats, coconut and chocochips. Be warned, these are highly addictive and no one can have just one.
If you don't have pecans, you can replace them with walnuts, almonds or cashews.
Use old fashioned oats and not the two minute oats.
If you don't have wheat flakes, increase the quantity of oats

Ingredients
Whole Wheat Flour 45 gms
Poha flour 15 gms
Old Fashioned Oats 25 gms
Wheat flakes 15 gms
Dessicated Coconut 20 gms
Baking Soda 1/8 tsp
Cinnamon 1/4 tsp
Butter 45 gms
Raw Sugar 35 gms
Cashew bits 30 gms
Chochochips 20 + 20 gms
Vanilla Extract 1 tsp
Thick Yogurt 1 tbsp
Method
Mix Whole Wheat Flour, Poha Flour, Oats, Wheat Flakes, dessicated coconut, baking soda and cinnamon in a bowl and keep aside.
Whip cold butter and using a hand beater.
Now add in raw sugar and beat till light and fluffy.
This will take 3-4 minutes
Now add yogurt and beat again.
Now tip in the dry ingredients and mix well.
Add cashew pieces and 20 gms chocochips and bring the dough together.
Remaining chocochips will be used for sticking on top of the cookies.
Do not knead the dough.
Let the dough rest for 30 minutes.
Take small pieces of the dough , approximately 25 gms each, flatten between your palms.
Stick a few choco chips on each cookie.
Place them 2" apart on a baking sheet lined with parchment paper.
Place it in the fridge for 20 minutes.
Preheat your oven at 180 with fan for 12 minutes.
Bake at 180 degrees Celsius for 20 minutes.
Rotate the tray after 10 minutes for even baking
Let them cool on the baking tray for 10 minutes.
Remove them on a wire rack to cool further.
Store in an airtight container once completely cool.
