Dahi Papdi

Dahi / Yogurt holds a special place in Indian Cuisine, especially during Summers, as it not only keeps the body cool but also provides hydration and nutrition.

It is for this reason it is served in various avtaars....raita, buttermilk ,shrikhand, and last but not the least Chaat.

Chaat holds a very special place in every Indians heart. Dahi is an integral ingredient in most chaat varieties like Dahi Bhalla, Raj Kachori, Tokri Chaat and not to forget Dahi Papadi.

Dahi Papdi has a lip smacking taste. All items needed for preparing this chat can be made a couple of days in advance. I like to set curd for chaat separately with about 2 tbsp sugar for every half a litre of milk. This makes the curd with a natural sweetness. Takes the taste of any chaat a few notches above .

If you have forgotten to set this way then add some sugar while whisking the curd.

Ingredients

Papdi 1 recipe

Thick Curd 1 cup

Sugar 1 tbsp (optional)

Salt to taste

Black salt 1/4 tsp

Roasted Cumin Powder 2 tsp

Kashmiri Red Chili Powder 2 tsp

Tamarind Chutney 1/4 cup

Green Chutney 1/4 cup

Boiled potato 1 large

Boiled Kabuli chana 1/4 cup

Chopped Coriander 1/4 cup

Nylon Sev 1/4 cup

Pomegranate pearls 2 tbsp



Method

  1. Whisk curd, add sugar some salt, black salt, 1/2 tsp roasted cumin powder, 1/2 tsp red chili powder.

  2. Keep it in the fridge .

  3. Chop boiled potato in very small cubes.

  4. Add some 1/8 tsp of salt and red chili powder each.

  5. To serve

  6. Place 5 papdi on a plate in a single layer.

  7. Arrange 1/4 of chopped potato and boiled chana each over it.

  8. Now spread 1/4 cup of ready curd.

  9. Spread 2 tbsp of tamarind chutney and 1 tsp of green chutney.

  10. Sprinkle 1/8 tsp salt, red chili powder and cumin powder each.

  11. Garnish with chopped coriander, nylon Sev and pomegranate pearls.

  12. Serve immediately.

  13. Similarly make more individual plates with remaining papdi.

  14. Dahi Papdi should be served immediately after assembling, else these will turn soggy and won't taste good .

  15. You could also simlpy arrange all the items on the table and let everyone make their own plate as per their taste.

  16. OR

  17. You could make a large platter instead of individual plates and let your family members/ guests serve themselves.
