Crème caramel, flan, caramel custard, or caramel pudding, this delicious dessert has numerous names. It is is a custard dessert with a layer of clear caramel sauce. Eggs play an important role in this dessert.
Here is my humble attempt in making this classic dessert without eggs.
Serves 6
Ingredients.
Milk 1 cup
Condensed Milk 1/2 cup
Thick Curd 1/2 cup
Cornflour 1 tbsp
Vanilla Extract 1tsp
Raw Sugar 1/4 cup
Water 1 cup
Method
Hang curd in a muslin cloth for 4 hours.
Mix hung curd, milk, condensed milk and vanilla extract and pass it through a sieve to get homogeneous mixture.
Heat sugar in a pan.
When it melts and turns golden , pour it in a 6" baking tin.
Swirl the tin to spread sugar evenly.
Let it cool completely.
Take a deep pan, keep a stand in it ,pour a cup of water.
Bring it to a boil.
Pour the milk mixture into the prepared tin.
Cover it with aluminium foil tightly.
Keep it on the stand in the pan, cover the pan with a lid.
Let the pudding steam for 40 minutes on low heat.
Check the pudding ,it would have set by now.
Keep it in the fridge for 6-8 hours, to set further.
Now cover the tin with a serving platter and carefully flip it.
It's ready to be served.
