Khameeri Roti with sourdough discard

I am really enjoying my Sourdough journey. These are indian flat breads made with discard .Khameer means fermentation and roti is flat breads. So these are flat breads made with fermented dough...hence the name Khameeri Roti.

If you don't have ajwain seeds (carrom seeds), you can use oregano.




Ingredients


Sourdough discard 75 gms

Atta 125 gms (wholewheat flour)

Coriander chopped 1 tbsp

Red chili powder 1/2 tsp

Salt 1/2 tsp

Ajawin 1/4 tsp

Water 75-85 ml


Method

  1. Make a soft dough as we would for roti using all the above mentioned ingredients.

  2. Let it rest for 2 hours.

  3. Divide into 4.

  4. Roll between your palms to make smooth balls.

  5. Cover them and let them rest for 10 minutes.

  6.   Roll   out a ball  into a roti using flour.

  7. Cook on a hot girdle till brown spots appear on both sides.

  8. Press lightly all over with a clean kitchen towel.

  9. You can finish off on open flame.

  10. Brush ghee/ white butter.

  11. Serve immediately.

  12. Repeat the process with remaining balls.

Rotis that tasted so good, that you want more. It tastes a bit different than a tandoori roti and your regular phulka roti, but yet you feel this roti is really good to taste
