Lauki Peels ki chutney

These days I am on a spree of trying out new chutneys. I managed to get organic Lauki so tried it's peels chutney. Served it with dosa and I must say it was well appreciated by the family.
Another gem from waste . You can use dry or fresh coconut whatever is available.
Do give it a try.

Ingredients
Lauki peels 1 cup
Oil 2 tsp
Chana Dal 1 tbsp
Peanuts 2 tbsp
Sesame seeds 1 tbsp
Red chili 2
Coconut 2 tbsp
Ginger 1 tsp
Tamarind paste 1-2 tbsp
Salt to taste
Tempering
Oil 1 tbsp
Mustard seeds 1 tsp
Green chilly 1
Curry leaves 5-6
Method.
Heat 1 tsp oil in a pan.
Add chana dal, peanuts and red chili.
Roast on low heat for 3-4 minutes.
Now add sesame seeds and roast for another minutes.
Remove from heat and mix in coconut.
Let it be in the pan for 2 minutes.
Remove the mixture on a plate.
In the same pan add another tsp of oil and tip in lauki peels.
Sprinkle some water and cover and cook till the peels are tender.
Once the peels come to room temperature
Blend the peels and other ingredients into a coarse paste , adding water as needed.
Remove in a bowl.
Taste and ajust salt and tamarind.
Tempering.
Heat oil in a pan.
Add mustard seeds.
Once they crackle, add green chili slit midway and curry leaves.
Pour over the chutney.
Serve it with dosa/ idli/ paratha/ hot rice .
Stay good for 4-5 days in the fridge.
