MASALA GUD (jaggery)

Masala gud is very popular in North India.

The kind of weather we have right now, it's a must needed item in our daily menu.

We all are aware of the benefits of gud aka jaggery. It cleans the lungs. Has lot of minerals much needed by our body. Helps fight anemia. Masala Gud has some warm spices also that help us fight this cold season. Have a piece post meals. It helps in digestion also.

Use a flavorless oil or virgin coconut oil, as per your taste.

This recipe is my dear friend Raman's . I have modified it slightly to suit my taste.

Ingredients


Gur / Jaggery 500 gms

Oil 2 tbsp

Ajawiin 1 1/2 tsp

Saunf. 1 1/2 tsp

Sesame seeds. 2 tbsp

Black pepper powder 1/2 tsp

Ginger powder. 1 tsp

Cashews 1/3 cup

Almonds 1/3 cup

Makhane. 1 cup

Dry coconut slivers 1 tbsp


Method

  1. Dry roast ajwain and saunf.

  2. Once these cool down, crush them finely in mortar and pestle.

  3. Keep it aside.

  4. Dry roast sesame seeds.

  5. Keep the aside separately.

  6. Similarly roast coconut slivers and keep them aside

  7. Now dry roast makahana and nuts one by one.

  8. In a mortar and pestle crush the nuts and makahana.

  9. Chop the gur finely.

  10. Grease a thali with oil and keep aside.

  11. Heat oil in a wide pan .

  12. Add gur and let it melt.

  13. Keep stirring in between.

  14. Keep the flame medium low

  15. Once the gur melts completely, tip in all the nuts, spice and sesame seeds.

  16. Quickly mix everything and pour in the greased thali.

  17. Spread it evenly.

  18. Smoothen the top with the back of a greased glass.

  19. After five minutes cut it into squares.

  20. Let it cool completely, now remove the squares and keep them in an air tight container.

  21. Enjoy guilt free healthy sweet.
