Melt in your mouth Russian Cookies
My bhabhi casually mentioned about a set of cookies her mom had made. Her description of the cookies made me salivate. She was very generous in sharing the recipe with me. This is a recipe from a Russian magazine. The recipe uses cottage cheese. She asked me to use paneer, which is quite similar to their cottage cheese.
This cookie is perfect for these times when we have limited resources. It's made with basic ingredients generally found at home.
The tricky part is to lift the cookies after you cut them. I used a metal ruler to lift them . Use a thin flat object ,something like a bench scraper to lift them. In case you still find it difficult, place the rolled out dough in the fridge for a few minutes. These can then be lifted very easily.
The original recipe had maida and sugar ,but I have made them with atta (wholewheat flour) and jaggery.
Do try them.

Ingredients
WWF. 3/4 cup less half tbsp
Butter. 50 gms
Paneer. 50 gms
Jaggery powder 2-3 tbsp
Method
Beat butter and grated paneer till light and fluffy.
Fold in half cup flour. Mix lightly with your fingers.
Now add one tbsp flour at a time till you get a soft dough.
I used up half tbsp flour less than 3/4 cup.
Let it rest for 30 minutes.
Now roll it between two parchment sheets.
Roll it slightly thick.
Use a 2-3" diameter round cutter to cut cookies.
Lift them and keep them on a baking sheet lined with parchment paper.
Sprinkle half a tsp of jaggery powder.
Fold them, you will get a semi circle.
Now sprinkle 1/4 tsp jaggery powder.
Fold them. You would now have a triangle.
Sprinkle a pinch of jaggery powder.
Repeat the process with rest of the cookies
Bake them in a preheated oven at 180 degrees Celsius for 15- 20 minutes.
Mine were done in 20 minutes.
Let them cool on the baking tray.
Then store in an airtight container.
