Millet Handvo

Handvo, a delicious vegetable cake made with a mixture of  dals, rice and bottle gourd and other vegetables. It's a healthy breakfast choice from the state of Gujarat.

I have  incorporated  millets in the handvo.

I have used a mixture of kodo millet, foxtail millet and quinoa. You can use any combination of millets available or even one millet.

Vegetables generally used are bottle gourd, carrot, fenugreek leaves, spinach , peas. But bottle gourd is a must as it provides the required moisture to keep the handvo moist.

Bottle gourd can be replaced with zucchini.

It can be made in a pan or baked in the oven

I made it in a pan.




Ingredients


Mix millets 6 tbsp

Chana dal 1/4 cup

Brown Rice 1/2 cup

Bottle gourd 1 cup grated

Sour yogurt 1/4 cup

Green chili 2

Ginger 2 tbsp

Red Chili pd 1/2 tsp

Fresh turmeric 1 tsp grated

Salt to taste

Eno or Baking Soda 1/2 tsp


Tempering

Oil 1 tbsp

Asaefotida a pinch

Mustard seeds 1 tsp

Sesame seeds 2 tsp

Curry leaves 1 sprig


Method

  1. Wash and soak millets ,dal and rice for atleast six hours.

  2. Drain the water and grind to a slightly coarse mixture along with green chili, ginger, turmeric. Add 1/4 cup water if needed.

  3. Mix yogurt and leave it covered overnight to ferment

  4. Next morning add bottle gourd and any other vegetable if using. I have used only bottle gourd.

  5. Add salt and red chili powder.

  6. If you don't have fresh turmeric, then add 1/2 tsp turmeric powder.

  7. The batter should be quite thick.

  8. Heat a non stick pan.

  9. Add oil, asaefotida and mustard seeds.

  10. Once mustard seeds crackle add sesame seeds and curry leaves.

  11. Now mix eno to the batter and carefully pour it into the pan.

  12. Cover it and cook on medium heat till the bottom turns brown and crisp.

  13. Mine took 8 minutes.

  14. Now slide it to a plate and flip it over the pan again.

  15. Cook the other side also for similar time.

  16. Now insert a knife and check, if it comes out clean, then it is done, else cook it for couple of more minutes.

  17. Let it sit in the pan for  2 minutes.

  18. Now transfer it to a chopping board and slice it.

  19. Serve immediately with green chutney and tomato ketchup.



Note:

  1. I haven't tried baking it in the oven yet.

  2. But you can bake it in a preheated oven at 180 degrees celsius for 30-40 minutes.

  3. Baking time will depend on the thickness of the handvo. Keep checking after 30 minutes till you get a clean skewer.
