I had baked a beautiful loaf of bread last night. When hubby dear saw it today morning he announced, let's skip roti sabzi and have sandwiches for lunch.
It was a welcome break for me as he is the one who makes sandwiches.
I made the stuffing of paneer and veggies that were available at home.
We enjoyed these with a glass of chilled coffee.

Ingredients
Sandwich
Bread slices 12
Butter As needed
Stuffing
Paneer 125 gms
Onion 1 small
Capsicum 2 tbsp
Cucumber 1/4 cup
Pickled jalapeno 2 slices
Chopped coriander 2 tbsp
Green chili 1
Mint chopped 2 tbsp
Salt to taste
Chili powder 1/2 tsp
Ajwain seeds 1/4 tsp
Method
Crumble the paneer.
Chop all the vegetables very finely.
Now mix all the ingredients mentioned under stuffing.
Divide the stuffing into 6 .
Butter the bread slices.
Place a bread slice on a sandwich maker.
Press down the stuffing all over the bread slice.
Cover with another slice.
Grill till done to your taste.
Slice into two.
Serve with green chutney and tomato ketchup with some salad on the side.
