A lovely salad for the summer months. It is a meal in itself.
You can also add coloured bell peppers, red cabbage, some baby spinach.
This is just an idea. Use your creativity to make a salad to suit your taste buds. Play with the ingredients.
Ingredients
Pearl Barley 1 cup
Mango 1 cup
Pineapple 1/2 cup
Cucumber 1/2 cup
Onion 1/2 cup
Frozen Corn 1/2 cup
Basil leaves a few
Celery leaves a few
Dressing
Extra Virgin Olive Oil 2 tbsp
Salt 1 tsp or to taste
Cracked Pepper 1/4 tsp or to taste
Toasted Seeds 1 tbsp
Lemon juice 1 tbsp
Mango pulp 2 tbsp
Pineapple juice 2 tbsp
Method
Soak Pearl Barley for 6 hours.
Boil in lot of salted water.
Strain and wash in cold water.
Now spread it on a large plate.
Once it dries a bit , take one cup for salad and freeze the rest for future use.
Take the dressing ingredients in a bottle and shake vigorously to make a homegenous mixture.
To serve:
Take pearl barley, mango, cucumber, corn, onion and pineapple in a bowl.
Mix lightly.
Pour the dressing.
Mix again.
Garnish with greens and serve immediately.
