Who doesn't like something crisp with rice. Be it dal rice or Sambhar rice or khichadi. But when you think crisp its generally deep fried. That's why I love this Raw Banana Roast. It can be made with very little oil. If the spice powder is ready in your pantry then it is so quick to make.
While boiling bananas make sure they are al dente and not mushy.
Ingredients
Raw Banana. 3 medium sized
Salt to taste
Raw Mango Powder 1/2 tsp
Spice powder
Coriander seeds. 4 Tbsp
Urad dal 2 Tbsp
Chana dal. 2 tbsp
Cumin seeds. 2 tsp
Red chili. 6 whole
Turmeric pd. 1 tsp
Peppercorn 1 tsp
Tempering
Oil 3 tbsp
Mustard seeds. 1 tsp
Curry leaves. 10
Method
Wash and scrape the bananas.
Pressure cook in salted water for 2 whistle.
Once cool, peel them and cut into roundels.
Spread the banana roundels in a large flat dish
Dry roast all the ingredients mentioned under spice powder, except turmeric.
Once the spices have cooled make a fine powder, mix in turmeric powder.
Take 2 tsp of powder in a plate. Mix salt and dry mango powder.
Sprinkle this spice powder on banana roundels.
Mix gently
Heat oil in a non stick pan.
Add mustard seeds. Once they crackle add curry leaves.
After a few seconds add the banana roundels and cook until crisp on both the sides.
Serve immediately.
Pairs very well with rice and curry.
I usually serve them with a South Indian gravy like kootu /sambaar.
Note:
Store remaining spice powder in an air tight bottle for future use.
