Tomato Puree
Whenever you buy tomatoes in bulk , It is best to make puree and freeze it. It comes handy when you are on a hurry.
I pass it through a sieve to get silky smooth puree. But this is completely optional.
I have also observed that this puree gives tastier gravy than freshly made puree.
Add these cubes along with fresh tomatoes while making pizza/pasta sauce for an intensified taste.
I freeze it in ice tray. And then the frozen cubes go into a ziplock.
Ingredients
Tomatoes 1 kg
Salt a pinch
Method
Wash and roughly chop the tomatoes.
Puree them in a food processor.
Pass them through a sieve.
Press hard to extract as much pulp as possible.
Pour the puree in a pan, add salt.
Now cook it till water evaportes completely.
Let it cool.
Now transfer to an ice tray.
Keep overnight int the freezer.
Transfer the cubes into a ziplock.
Keep them in freezer.
Use as and when needed.
Gives around 200+250 gms of puree
